My 1969 911e has this issue. The car starts fine on the hand throttle and once started it warms up reasonably quickly and I can shut down the hand throttle within 5 mins or less. At that point the car runs perfectly. Once it gets properly hot though, it's less happy at lower revs. The tick over tick...

I suspect RH Classic are RH Specialist Insurance and your insurer is probably Hiscox? My house ins is arranged by a v helpful girl at Bluefin in Southampton - she arranges insurance for my two cars through Hagerty - who also place my insurance with Hiscox, so I think my requirments are the same.
